Banana Salsa
Every time I’ve given salsa-making programs or workshops, I have attendees vote on their favorite out of the several salsas I make for them. Again and again, this one has voted the favorite. People are always surprised – really? Banana salsa? Try it, you’ll be surprised at how good it is, too. Just don’t substitute any of the ingredients.
2 not fully-ripe bananas, diced
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1/2 habanero or 1 whole jalapeno pepper, seeds removed, diced fine
1 tablespoon fresh ginger root, minced
3 tablespoons fresh lime juice (approx. 1 1/2 limes)
1 tablespoon brown sugar
1/4 teaspoon ground cardamom
Dash of salt, optional
Combine all of the ingredients in a mixing bowl and gently mix. Correct the seasonings, adding more salt, lime juice, or sugar to taste.
The salsa should be a little tart and a little sweet. Best served one to two hours after mixing to allow flavors to combine.
Serve with chips or top a grilled fish or chicken sandwich with this, it makes a very versatile salsa or dip.
